Brie Sandwich With Crispy Prosciutto Caramelised Fig

INGREDIENTS

  • 1 Fig sliced
  • 1 tsp. Honey
  • pinch salt
  • 2 Slices proscuitto
  • Brie
  • 1 tbsp. Butter
  • 2 Slices crusty bread, sourdough or whatever you fancy
  • Handful of salad leaves

INSTRUCTIONS

  1. Place the sliced figs on a baking sheet drizzle with honey and sprinkle with salt, place under a hot grill to caramelise for 5 minutes.
  2. Crisp up the prosciutto in a frying pan for a few minutes on either side. Heat a griddle pan and add a little butter, toast the bread on each side.
  3. Spread the toasted bread generously with the brie add the prosciutto, caramelised figs and leaves.

































You will be the envy of all your work mates with this sandwich for lunch. If it was back in school days they would all be wanting to swap with you. Do you think what people have in their sandwich could tell us something about their personality? I kind of hope not because I would be so confused. Some days I’m a caramelised fig crispy prosciutto and brie kind of girl and then the next day a good old egg mayo especially with cress on. I also really don’t care anymore if my egg mayo sandwich offends anyone, it tastes bloomin good so there. It was always horror when you opened your lunch box to discover your Mum had packed egg mayo. I think what we have in our sandwich especially if its one we have made for our packed lunch probably just says more about what our morning was like to be honest.
Sorry it is such a simple recipe today, well its not really a recipe just a list of delicious ingredients. I have been really loving figs at the moment they are so good when they are in season and I’m finding as may ways to incorporate them as possible. Obviously this flavour combination of the figs and prosciutto is a classic and for good reason it just works so well the sweet figs with the salty ham is perfection. Treat yourself to this sandwich in your lunch box this week or another lunch you love. Take some time over it, having something delicious and thoughtful waiting in my lunch box makes my work day just that bit better, a moment of pleasure in a busy day.
